Naomi's Honey Cake best you'll ever eat

My father will tell you, as well friend Allen that if your going to eat honey cake for the New Year it should be the honey cake made by Naomi. The cake itself is great but the story behind it makes the cake all the sweeter to eat.

Picture 51 years ago a newly wed couple living in garden apartments in Palisades Park NJ. The wife makes her first honey cake for her honey, which calls for 1 cup of coffee. The dutiful and excited husband bites into the cake only to find a full cup of coffee grounds. crunch crunch crunch and so the beginning of a beautiful 44 year marriage.


Here is Na's Honey Cake

she notes on her recipe card use mixmaster

Preheat over 350
use 9x12x2 pan
seprate 2 eggs and put whites in small bowl
yolks into large bowl
add 1/4 c oil and 1 Cup sugar
mix thoroughly at medium speed
sift 2 1/2 Cup flour (sift then measure)
2 teaspoons basking powder
1/4 teaspoon salt
1/2 teaspoon ginger
1 teaspoon cinaman
1/2 teaspoon baking soda

Add dry ingrediants to egg mixture alternating with 1 cup coffee (not the grinds LOL) mixing well in between.
Beat egg whites until stiff and then fold into the other mixture carefully
bake 45 to 50 minutes

hints separate eggs while they are cold
fold the white mixture in don't stir in you have to keep the height in the batter

Again a happy and healthy sweet new year. Back to the Jeans fitting process after the holiday
